So my obsession with peanut butter is slowly spiraling out of control sing as I bought an 800g container today it won’t survive long.
Also it was meal prep Sunday today!
This week’s dinner consists of sweet and sour chicken stirfry with hokkien noodles and and one whole of mixed veg and a whole bag of broccoli florets.
Also I made a lunch meal prep of lean beef burgers which I cooked up to have with salad which I can make on the day.
500g chicken thigh (I find breast can get quite dry)
2 x 2 person serving hokkien noodle packs
1 bag frozen mized veg
1 bag frozen broccoli florets
Sweet and sour stirfry sauce
Dice and cook chicken in a wok until sealed and slightly browned, then add veg and place on low heat until chicken is fully cooked through and veg is cooked.
Place noodles in hot water until loosened then drain and place in wok. Add sauce and voila! You have stirfry!
For the beef burgers
500g lean beef mince
1/2 white onion diced
1 tsp worchestershire sauce
1 tsp garlic powder
1/2 tsp oregano
1 tsp paprika
1/2 tsl chilli flakes
1 Oz bread crumbs (I used two slices of bread)
Mix ingredients and roll into burgers, mine made 6. pan fry until cooked :)
